The Tasting Wheel品鉴轮
How to read it
Each card describes a good example of the tea. Harvests, makers and grades differ, so your cup may lean one way or another. The faults show what a poor or badly kept example tastes like.
Brewing
Teapot follows our product pages: grams per 250 / 350 ml of water. Gaiwan is the method we teach at the tea table: leaf measured as a share of the bowl, short steeps, adding a few seconds each time.
Sources
Every card lists the sources behind it. Map data from Natural Earth. Tasting terms follow China's standard tea-tasting vocabulary, in our own words.
